Oven-Baked Salmon with Stuffed Olives

INGREDIENTS
- 2 large fillets (about 6 ounces each)
- 1 cup García de la Cruz Manchego Cheese Stuffed Olives
- 1 large lemon, sliced
- 3 garlic cloves (minced)
- 1 tablespoon fresh thyme
- 2 tablespoons García de la Cruz Extra Virgin Olive Oil
DIRECTIONS
- Preheat your oven to 375°F (190°C).
- Slice the lemon
- Prepare the garlic
- Place the lemon slices on the bottom of an baking dish
- Place the salmon fillets on top of the lemons
- Season the salmon fillets with salt and pepper.
- Add garlic and olives
- Drizzle with Extra Virgin Olive Oil
- Place the dish in the oven and cook for about 25 minutes or until the salmon is cooked through and flakes easily with a fork.
- Serve hot, garnished with additional lemon slices if desired.
