Traditional Spanish Ham Croquettes

INGREDIENTS

For the croquette mixture

60 ml (4 tbsp) García de la Cruz Master Miller Extra Virgin Olive Oil

70 g jamón serrano, very finely chopped

1 small onion, finely minced

80 g all-purpose flour

750 ml whole milk, warm

Salt, to taste

Freshly ground black pepper

A pinch of nutmeg

For coating & frying

2 eggs

Breadcrumbs

HOW TO MAKE

Sauté the base
Heat the extra virgin olive oil over medium heat. Add the onion and cook slowly until soft and translucent.

Add the ham
Stir in the jamón serrano and cook for 1–2 minutes, just until aromatic.

Prepare the roux
Add the flour and cook for 2–3 minutes, stirring constantly to remove the raw flour taste.

Make the béchamel
Gradually add the warm milk, stirring continuously until smooth and creamy. Season with salt, pepper, and nutmeg. Cook until the mixture thickens and pulls away from the pan.

Let it rest
Transfer the mixture to a dish, cover with plastic wrap touching the surface, and refrigerate for at least 2 hours (overnight is ideal).

Shape and coat
Form the croquettes, dip in beaten egg, then coat well with breadcrumbs.

Fry until golden
Heat olive oil to 170–180 °C (340–355 °F). Fry in batches until crisp and golden. Drain on paper towels.
